Peanut Lovin' Cherry Granola Recipe

Here is a healthy granola recipe for all you peanut lovers out there. This sweet tasting granola recipe combines the goodness of peanuts and cherries and carries the fresh scent of cinnamon. Not only delicious to the taste, this healthy granola recipe provides plenty of fiber which allows for active, healthy lifestyles through balanced nutrition. This granola recipe is great snack when you're "on the go" but can also be a delicious and satisfying healthy breakfast cereal to prepare you to face the day ahead.

Makes: 8 cups

Granola Recipe Ingredients:

  • 3 cups rolled oats, old-fashioned
  • 1 cup shredded coconut
  • 1 cup honey
  • 1 cup peanuts
  • 1 cup cherries (dried)
  • 1 cup dates (chopped and pitted)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup sesame seeds
  • 1/4 cup wheat germ
  • 1/4 cup peanut oil
  • 3 tbsp butter (melted)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 pinch salt

Granola Recipe Directions:

  1. Preheat oven to 300°F
  2. Combine butter, oil, brown sugar, honey, cinnamon and vanilla in a large bowl
  3. Add rolled oats, coconut, wheat germ, peanuts and sesame seeds and toss
  4. Apply non-stick coat or parchment paper to rimmed baking sheet
  5. Spread mixture evenly across baking sheet
  6. Bake for 30 minutes, stirring every 10 nimutes, until golden.
  7. Stir thoroughly and place in oven for an additional 15 minutes as necessary
  8. Sprinkle salt lightly over granola, and transfer to large bowl.
  9. Add cherries and dates and stir.
  10. Allow to cool

Serving tip: For a new fun twist on this peanut granola recipe try serving with yogurt and your favorite sliced fresh fruit. Serve chilled for a great desert after a healthy dinner, or lunch.
